January Meal Plan 1st-10th

After two very meat-heavy months I have decided to go for a much more veg-oriented meal plan for this month. However, as I don’t know what veg I’m going to end up with til the week it’s due to arrive, this month’s meal plan will have to be released in batches. The rough aim is to have only 1 meat day per week (aside from leftovers for lunch as per the norm).

  • 1st: Twice baked potatoes & salad
  • 2nd: Roast root veg frittata
  • 3rd: Macaroni cheese
  • 4th: Potato & spinach curry
  • 5th: Veggie quiche (bit of a planning error having this the same week as the frittata, never mind)
  • 6th: Beef stew
  • 7th: ‘Hippie pie’ (like cottage pie only with lentils instead)
  • 8th: Braised savoy cabbage w/tagliatelle
  • 9th: Squash soup & homemade bread
  • 10th: Parsnip, leek & apple cakes

If you’ve got any veggie friendly ideas, I’m all ears. I’m not used to making do without meat.

    LOL at Hippie Pie! I hear dreadlocks can get caught in your teeth though, watch out for that ;-)

    How about pepper burritos? It’s a surprising hit with my lot. Sliced onion sauteed with chilli powder, then add kidney beans. Chop peppers of diffrent colours in to strips (I tend to chop the strips in half too as it saves messy eating) and mix in.
    Dollop some plain yogurt on to tortilla wraps then some of the mix from the pan. Wrap them up and sprinkle grated cheese on top before grilling until golden.

    I serve with salad and/or potato wedges and some extra yogurt in case I made them too hot.

      Love it – might have to sub kidney beans as not keen myself but I bet this is right up Isabel’s street (and Oliver will give pepper strips a good chewing). Cheers :)

  2. The squash soup sounds delicious!

    This definitely won’t suffice for a whole meal, but my boyfriend likes making wilted kale with garlic and onion. It was quite tasty!

  3. Looking for veggie meals you say?

    A few of my fav’s are veggie lasagna roll ups. Instead of adding hamburger to the sauce i add diced up peppers, brocollie and zuchini.

    Another fav is Chickpea tacos! Take canned chick peas (or soak dried ones as per usual) and toss in olive oil and add spices (taco spice, or chilli + cayenne + paprika + garlic etc what ever you like) and bake for 20 mins or so @ 200c. It makes them a bit crunchy on the outside and soft on the inside. Perfect for hard or soft tacos. Add tomatoes, or lettuce or whatever you normally add to tacos and they’re soooo yummy!

  4. We eat entirely vegetarian at home and I am laughing because A) I have noticed your very meaty meals, and B) I sat here for a minute wondering what we even eat – I grew up eating meat for dinner every night so vegetarian cooking does not come naturally to me.

    Here’s what’s typically in rotation for our monthly meals:
    – burrito bowls (no tortilla, just the filling in a bowl with sour cream and maybe some tortilla chips)
    – broccoli and corn frittata (http://www.eatliverun.com/frittata-on-my-mind/)
    – spaghetti (or ravioli or tortellini)
    – stir fry (tofu cubes instead of meat)
    – tomato soup + grilled cheese sandwiches
    – french toast (or pancakes – “breakfast for dinner”)
    – homemade pizza (Daniel makes a really good white-sauce pizza with roasted cauliflower and breadcrumbs. It is DELISH.)
    – some kind of fake meat – Trader Joe’s has some good chicken strips, or maybe we’ll hate ourselves and buy fake hot dogs or fake corn dogs.
    – salad (lots of toppings – pears, dried blueberries, feta, etc.)
    – chili (meatless, obvs. Sometimes I put quinoa in it.)
    – quinoa patties (http://eatingwelllivingthin.wordpress.com/2010/11/01/love-my-quinoa-burger/ – THESE ARE REALLY, REALLY GOOD)

    I am one of those people that has no problem repeating the same six or seven meals throughout the month, so… these ideas may be on the extremely boring side, but it gets us fed, so…

  5. I wouldn’t mind seeing some of your recipes for these. Something I want to do this year is eat more healthily – and I like veggie food, with the right recipes. (I’ve tried some in the past that were awful.)

    Some of the ideas in the comments sound pretty good too.
