Banana bread with shredded zucchini is really good - you should try it out if you have any more. That is, of course, If a courgette is the same thing as a zucchini, which it appears to be.

Is it a green one or a yellow? I find the yellow ones (from f1 Taxi) have a different, creamier taste.

We go through at least one courgette a week, great for risotto, stir fry veg and going in bolognaise or for use in lasagne. Tastes great raw with carrot and cucumber sticks as cruditees (or however you spell the word!).
Just to confuse your overseas readers you should try an Aubergine next year

Comment added: July 10th, 08 @ 9:03 pmThe weather has been perfect for growing squash (that’s what we call it) over here as well! I like to dig out the seeds and stuff them with fried rice, tofu, cheese and other weggies and then give them 20 minutes in the oven.
